Cherry Chocolate Marshmallow Cookies
My Own Recipe
Chocolate and cherries what a great combination! A perfectly balanced cookie topped with marshmallows.
This recipe came about from my love of chocolate and marshmallows and wanting to desperately wanting that combination in a cookie. I tried many recipe on the net but they all turned into a big sticky mess. Due to my cravings I developed this recipe. I knew that incorporating the marshmallows into the batter would give me the same sticky mess as the other recipes tried so I thought adding them at the end and slightly browning them just like you have from a campfire. I found out from tril and error that if you use frozen marshmallows that the browning of the them goes slower then if you use room temperature marshmallows. The biggest errors that learned was never use parchment paper under the broiler *cough* can we say smoke detector, and burnt cookies?

- 1 cup butter
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1 egg
- 2 table spoons maraschino cherry juice
- 1/4 teaspoon vanilla
- 2 cups flour
- 2/3 cups coco powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 375 oz jar maraschino cherries, finely chopped and drained
- 1/4 cup milk chocolate chips
- frozen mini marshmallows

Instructions
- Place one oven rack at the top of the oven, just under the broiler. The second rack in the middle of the oven
- Preheat oven to 350 degrees
- Grease baking sheets.
- Finley chop maraschino cherries drain and gently squeeze out the juice set aside
- Gently squeeze out the juice set aside
- Cream together butter and sugars
- Add eggs vanilla and cherry juice mix well
- Stir in flour, salt, baking soda, and coco powder
- Fold in cherries and chocolate chips
- Drop teaspoonfuls onto greased baking pans
- Bake for 8 minutes
- Place 2 or 3 frozen marshmallows on top of the cookies broil till the marshmallows are a light golden brown. Anywhere between 30 seconds to 1 minute deepening on broiler
- Cool on baking sheet for 5 minutes
- Transfer to wire rake to cool completely
